Ingredients

    2 cups brown rice
    1 can black beans
    1 chicken breast (boneless/skinless)
    1/2 cup salsa of choice

Directions

Cook the rice. This takes time depending on the brand you use, so plan accordingly!

In a skillet, spray some non-stick spray and cook the chicken breast.

In an 8-9" casserole pan, pour the rice, beans, and salsa. Shred the chicken and add into the casserole. Mix

Heat at 250 degrees until warm (20-30 minutes).

Serve as is or with Tostitos scoops (10 chips).

    Not bad! I added some taco seasoning to the rice and sprinkled a little low-fat cheese on the top to melt in the oven. - 5/13/08

    I had chicken leftovers in my fridge and had the rest of the ingredients in my pantry. Very easy to make and very tasty. I might add some cilantro if I make it again. - 5/4/08
