Ingredients

    1 Thomas' Light MultiGrain English Muffin
    1/3 wedge Laughing Cow Creamy Spicy Pepper Jack Cheese
    1 Morningstar Veggie Sausage Link
    1/4 cup Eggbeaters

Tips

I used to think Eggbeaters and Morningstar Farms Veggie Breakfast Links would be nasty but I was pleasantly surprised by how easy it was for me to use these as a trade out to control my fat and calorie intake. Don't knock it till you try it!


Directions

Split english muffin and toast. Microwave veggie link per package directions, about 40 seconds. Spread cheese on one side of toasted muffin. Break veggie link in half and press into cheese until it breaks and spreads out across the muffin. Using a microwavable dish about the size of the muffin, cook Eggbeaters about 40 seconds until fluffy. Place on top of sausage and top with other half of muffin. Delicious!
