Ingredients

    2 Chicken Breasts
    1 Can Mushrooms
    1.5 Cups Onions
    1 cup Salsa
    4 Cups Brown Rice

Directions

Cut uncooked chicken into 1 inch pieces. Put all chicken into a large skillet and fry with cooking spray. After chicken is done set aside on plate. In a saucepan start the rice to boil. In the skillet, spray it again, then put the can of mushrooms and onions in. Cook until onions are soft. Pour the salsa in with the onions and mushrooms and cook on low heat. Place chicken into the skillet with the onions and mushrooms and mix it up. When the rice is done, everything is ready to serve. Place rice first, then the chicken mixture on top.

    Easy and quick to make, children weren't really excited about it. Whatever I am having, the whole family eats so I look for things the children will receive well. - 3/14/07
