Introduction

This was a mix of what was in my refrigerator on vegetarian night. This was a mix of what was in my refrigerator on vegetarian night.
Number of Servings: 2

Ingredients

    Stir fry in 1 Tbsp canola oil about 3 minutes:
    1/2 cup onion
    Add and cook another 3 minutes:
    1 minced garlic
    1 cup red pepper slices

    Add and stir fry until browning:
    1/2 of 14 oz block of extra firm tofu

    Add and stir fry to wilt:
    3 cups chopped spinach

    Push all to side add and thicken:
    2 Tbsp. soy sauce
    2 Tbsp. water
    1 tsp. cornstarch

    Serve with cooked whole wheat pasta or soba noodles (not included in nutrition info)

Directions

Makes two generous servings of about 1 1/4 cup each.

    I'm going to try this tonight - I like the idea of mixing tofu with spinach - I have some brocolli slaw that I'll be adding instead of othe red pepper slides. - 4/26/09
