Introduction

Ingredients

    8 tbsp Natural Peanut Butter
    4 tbsp Low Sodium Soy Sauce
    1 Lime juiced
    1 tsp Red Chile Pepper Flakes
    1 tsp Ginger Root minced
    2 clove Garlic minced
    8 oz Whole Wheat Spaghetti
    2 Tblsp sesame seeds roasted and toasted
    2 medium Carrots, grated with a box grater
    3 medium Scallions (green onions) diced
    1 Tblsp Tamarind paste
    1 block Tofu, firm sliced
    4 tbsp Cilantro chopped

Tips

This dish is a hit with kids at parties and is a breeze to make. I love packing it for lunch because it has the protein and carbs to keep me going through the day.


Directions

Cook pasta according to box directions and preference.

In a large bowl whisk, peanut butter, soy sauce, lime, red chile flakes, ginger, garlic and tamarind paste. Add warm noodles and cook evenly.

Stir in carrots, scallions and sesame seeds. Garnish with tofu and cilantro.
