Ingredients

    1 bag of lentils
    1 can of Healthy Choice Chicken Noodle Soup
    3 or 4 medium sized potatoes
    Salt
    Pepper
    Garlic

Directions

Put lentils into a crock pot. If you choose to pre-soak the lentils (which helps remove the gas) then cut cooking time by about half. (Though you may need to keep watch.) But it works just fine without pre-soaking. Add water according to the directions on the side of the package. Cube 3 or 4 medium sized potatoes. You may choose to peel them, but I like to leave the skin on. Add salt and pepper to taste. Don't be afraid to use a lot of pepper. I'm adventurous when I eat so I like to use a couple of table spoons of garlic, but you should adjust it accordingly. A couple of teaspoons would most likely work well. If you prefer fresh garlic, crush an entire clove. Set crock pot on low and let the stew cook for about 6 or 7 hours. If you set it in the morning and don't get home until 8 or 9 hours later, it won't make much of a difference. It shouldn't burn as long as the crock pot is on low. It is best to add the can of Healthy Choice Chicken Noodle soup about an hour or so before the stew is finished. If you add it at the start, the noodles will get REALLY mushy. For an added fiber boost, you can add a can of spinach when you add the soup, but be sure not to overflow the crock pot.
