Ingredients

1 serving 1 Med. Green Bell Pepper
74 gram(s) bell pepper, red, sweet, raw
1 medium (2-1/2" dia) Onions, raw
1 can (12 oz) yields Yellow Sweet Corn, Canned
1.5 cup Green Giant Cut Green Beans, can
16 oz Beef, top sirloin
46 fl oz Tomato juice, with salt added
2 serving Rotel - Mild (1 can = 2.5 servings) 1 serving = 1/2 cup (by SHAUNDELL)
1 tsp Mrs. Dash (R) Garlic & Herb Seasoning Blend
.5 tsp Mrs. Dash (R) Original Blend
6 medium (2-1/4" to 3-1/4" dia.) Potato, raw
1.5 cup Mushrooms, canned
Tips
Cooking time will vary depending on your method.
Directions
Slice all the vegetables however you want them to be in the soup. Put in a crock pot and cover all with water. I cook at night while sleeping (on low of course). In the morning, cook beef in olive oil and mix onions and peppers with the beef while cooking to add the flavor. (I purchase the lean shredded beef but you could also use stewing beef).
Strain the water from the vegetables, then add the beef, tomato juice and rotel tomatoes. Allow to cook a little longer then ready to serve!
