Ingredients

    2 cup Old El Paso Refried Beans - Vegetarian
    12 tbsp Pace Original All Natural Medium Picante Sauce (2 Tbsp / 30 mL) (by ARCTIC_BLONDE)
    6 serving Mission Flour Tortillas, Soft Taco, 8 inch, 49g
    10 oz Mozzarella Cheese, part skim milk
    1 cup (8 fl oz) Yogurt, plain, whole milk, drained for 24-48 hrs to make yogurt cheese (instead of sour creme topping)

Tips

If you want to boost probiotics and like fresh, use or make Greek yogurt/yogurt cheese.
If you want to make your own yogurt and yogurt cheese, make the yogurt 3 days in advance, let cool 1 full day, drain to make yogurt cheese for 24-48 hrs.

Directions

The night before, place yogurt in strainer/drainer or buy Greek yogurt, which is thicker. I make my own yogurt, so strain for 24-48 hours in advance.

Shred mozzarella cheese (approximately 10 oz needed)
For each tortilla:
Spread 2 tbsp of picante sauce
1-2 tbsp of refried beans
1.5 oz mozzarella cheese

Fold tortilla, cook in oven at 350 degrees F until desired crispiness (about 15 minutes for me)
Top with yogurt cheese
