Ingredients

    Whole Wheat Flour, 1 cup
    Wheat flour, white, bread, enriched, 1 cup
    Baking Powder, 2 tsp
    Salt, .25 tsp
    Cinnamon, ground, .5 tsp
    Ginger, ground, .25 tsp
    Pumpkin, canned, 400 grams (14 oz can)
    Raisins, 1 cup (not packed)
    Egg, fresh, 1 large
    Milk, 2%, .75 cup

Directions

Preheat oven to 375 degrees F

Lightly spray muffin tins with low fat oil spray

Mix dry ingredients in one bowl, stir wet ingredients together in another. Add raisins to the wet ingredients before stirring in the dry. Only stir until mixed, as with any muffins too much mixing leads to ROCK HARD muffins.

Spoon into muffin tins and bake for 20-25 minutes, reducing time for silicone bakeware and increasing it for aluminum pans.

Makes 18 muffins.

    I just took the muffins from the oven, when I noticed there wasn't any sweetener I added 1/4 cup light brown sugar, also nutmeg, cloves for added spices and vanilla. Not bad but I wouldn't make them again. Will look for a different pumpkin muffin recipe. - 12/9/14
