Ingredients

-3 boneless, skinnless chicken breasts cut in half or in big chunks.
-6 Wheat dinner rolls or your favorite gourmet bread
-1/2 cup alfalfa sprouts
-1/2 avocado cut un 6 chunks
Pesto mix
-1 cup fresh basil leaves
-1/4 cup grated parmesan cheese
-1 tbsp extra light olive oil (more or less for desired consistency)
Directions
preheat oven broiler while preparing chicken and pesto
In a food processor mix together basil and parmesan cheese until the basil is the same size as the cheese. SLOWLY Add the oil and mix together. (you may need less or more oil for desired consistency.) Set aside.
Season chicken to your liking. I love to use cajun seasoning because i like spicy.
Grill your chicken about 15 min until cooked through. I cook it on my George Foreman Grill, but if you dont have one, use your broiler or saute on stovetop.
Place the 6 pieces of bread on foil and into the broiler for about 30 seconds. This is just to slightly toast and warm the bread.
Cut the rolls in half (like a hamburger bun)
So last you'll make 6 sandwiches.
On each sandwich will be a little pesto spread on each slice of bread. A pice of the chicken, a piece of avocado and a bit if the alfalfa sprouts. Eat like a sandwich. Makes 6 servings.
