Ingredients

    3 cup Sprouts Organic Vegetable Broth (Low Sodium)
    1 tbsp Coconut Oil Simple Truth Refined (by NINTENDOUGH)
    2 clove Garlic
    1 cup Leeks
    1.5 cup, chopped Onions, raw
    1 serving Yellow Bell Pepper, 1 serving equals 1.8 oz or about 10 strips
    56.69 grams Asparagus, fresh
    4 oz Russet Potatoe Baked (by STILLALIVE)
    2 cup Peas, frozen

Tips

I took this from the Vitamix cookbook and added the asparagus, peppers, leeks and garlic for extra flavor.


Directions

Saute all veggies (chopped) except for the frozen peas. Once cooked and translucent, add along with remaining ingredients to a Vitamix container and secure lid. Select Variable 1 and turn the machine on, then slowly increase speed to Variable 10, then to high. Blend for 6 minutes or until heavy steam escapes from the vented lid.
