Ingredients

1 cup brown sugar
3/4 cup margarine
2 large egg whites
2 tsp vanilla extract
1 15-oz can chickpeas, drained & rinsed
2 cups semisweet chocolate chips
3/4 cup raisins (optional)
2 cups white flour
1/2 cup rolled oats
1 tsp baking soda
1/4 tsp salt
Directions
Preheat oven to 350 degrees F.
Beatu sugar and margarine. Beat in egg whites & vanilla, then the chickpeas and chocolate chips.
Add flower, oats, baking soda, & salt, mix until a thick dough forms.
Drop by tablespoonfull onto greased baking sheet. Press with a fork to flatten.
Bake until the cookies are golden brown and just set, 11 to 13 minutes; do not overbake. Transfer to a rack to cool.
Store in airtight container for up to 3 days.
Makes 3 1/2-4 dozen cookies.
