Ingredients
-
* Egg, fresh, 2 large
* *Whole Wheat Flour, 1.5 cup
* Baking Powder, 2 tsp
* Salt, 1 dash
* Cinnamon, ground, 1 tsp
* Silk, Plain Soymilk, 1 cup, 1.5 serving
* Banana, fresh, 1 medium (7" to 7-7/8" long)
Directions
Pre heat your waffle iron or pancake griddle to medium. Don't forget to spray a little pam or vegetable oil on to prevent sticking.
Mash the banana throughly with a fork - make sure it is ripe or it won't mash very well. Add the 1.5 C Silk salt, flour, baking powder and cinnamon. Mix well.
Separate the eggs and mix the yolks into your flour/silk/banana mixture. In a separate bowl, using a clean and dry mixer or whisk, whip the whites to soft/medium peaks. Fold the whites gently into the batter and pour into waffle iron or onto pancake griddle and bake until golden brown (most waffle irons have a notifier for this).
A serving is one waffle.
