Introduction

Paleo / GF Sweet Potato and Leek Soup Paleo / GF Sweet Potato and Leek Soup
Number of Servings: 4

Ingredients

    2 Sweet potatos
    1 leek
    2 cup Beef Broth (Low Sodium)
    1 tbsp Butter, salted
    1.5 can Thai Kitchen Organic Coconut Milk (13.66 oz can)
    1 tbsp Garlic powder
    1 tbsp Cumin
    1/2 tbsp Cayenne Pepper
    1/2 tbsp Chili powder

Directions

Peel and dice sweet potato.
Rinse and Cut Leek
Saute Leek in butter until soft (3-5 minutes)
Add sweet potatoes and saute another 3 minutes
Add Spices (Garlic Powder, Cumin, Cayenne Pepper and Chili Powder)
Add Beef Broth
Cook until sweet potato is tender
Add Coconut Milk, Reduce head and simmer for 5 minutes.

Optional: Puree before eating.

Optional: Add panchetta to the recipe or serve with crispy panchetta on top.
