Introduction

Baby reds baked and then smashed and topped with garlic and parm. Baby reds baked and then smashed and topped with garlic and parm.

Ingredients

    2 lbs Red Potatoes
    1.0 tbsp Extra Virgin Olive Oil
    1.0 tsp Salt
    1.0 tsp Pepper, black
    3.0 tsp Garlic
    2.0 tbsp Parmesan Cheese, grated

Directions

Wash and pare potatoes. Place on baking sheet and bake at 350 until tender, 45 mins to 1 hour. Smash each potato once with a heavy glass or meat mallet. Drizzle tops with oil, sprinkle with salt and pepper, and top with garlic and parm. Place back in oven and bake for about 15 mins.
