Ingredients

    * Tofu, extra firm, 1 pkg
    * Bok Choy, about 2lb (cut into bite sized pieces)
    * Cornstarch, 2 tbsp
    * Shallots, cut into thin slices (about 1 cup)
    * Vegetarian "Oyster" sauce (mushroom sauce), 2 tbsp
    * Salt, .5 tsp
    * Olive Oil, 3 tbsp (or less)

Directions

Cut tofu into 1"X1"X.5" pieces. Dip tofu into cornstarch. Over medium high or high heat, fry tofu in 2tbsp (or less) of oil until brown (about 1-2 min on each side depending on the temp). Set tofu aside.

Stir fry shallots and bok choy in 1tbsp or less of oil. I like to keep stems and leave separate because it takes longer to stir fry the stems. The leaves can be added just before the tofu is added back in.

When cooked through (about 3 min) add tofu back in to reheat and add "oyster" sauce and mix.

Serve on brown rice (not included in recipe).
