Introduction

Ingredients:

•1 16oz. bag brown lentils
•8 cups vegetable stock
•1 15.5oz. diced tomatoes
•2 medium white potatoes, diced
•4 large carrots, sliced
•3 stalk celery, sliced
•1 medium onion, diced
•½ teaspoon salt
•1 small zucchini chopped

Ingredients

    2 cup Lentils
    8 cup Broth, Vegetable, Clearly Organic, Best Choice
    2 cup Del Monte Petite Cut Diced Tomatoes
    2 serving medium white potato (by RVPLINDA)
    4 medium Carrots, raw
    3 stalk, medium (7-1/2" - 8" lon Celery, raw
    1 medium Zucchini, baby
    1 medium (2-1/2" dia) Onions, raw

Tips

You can add or alter the veggies. I like zucchini but some people add kale or spinach.


Directions

Add all ingredients to the crock pot and stir. Cook on high for 2 ½ hours.

Serving Size: makes 8 1.5 cup servings
