Introduction

I was looking for a low-fat option to potato pancakes that I could eat because I love potato pancakes. I experimented with this little treat on a snowy day when I was bored and wanting comfort food without ruining my diet. Ingredients

0.10 cup Chef's Cupboard instant mashed potatos
    .5 cup, chopped Onions, raw
    2 clove Garlic
2 tsp Mrs. Dash (R) Garlic & Herb Seasoning Blend
.66 cup (8 fl oz) Water, tap
3 serving Egg White 1 Large, raw, fresh (by GODDESSOFWISDOM)

Tips

If teamed up with a lean meat like salmon, chicken, turkey, lean pork and a green leafy vegetable, it will be a low carb meal appropriate for diabetics like myself.

Directions

In a blender or food processor mix potato flakes, chopped onions, garlic cloves, garlic and herb seasoning, and water together until pasty. With wet hands (so it won't stick to your hands as much) make a ball and then flatten it. Preheat oven to 375 degrees. Cook for 30 minutes, then broil each side for 3 minutes or until brown.
