Ingredients

    2 bunches fresh curly parsley
    3-4 Roma Tomatoes, Med
    1/4 Red onion, chopped
    1 1/4 cup cooked & cooled quinoa
    Salt & garlic powder to taste
    2.0 fl oz Lemon Juice
    2 oz. Olive Oil

Directions

Using a food processor, finely chop parsley, tomatoes and onion. Add cooked, cooled quinoa. Add salt and garlic powder. Mix together lemon juice and olive oil and add to parsley quinoa mixture. Stir to mix well. Serve and enjoy.

Serving Size: Makes 5 1/2 cups of 1/2 cup servings
