Ingredients

    1.5 kg/ 3 lbs Chicken Thigh
    1.0 large Onions, raw, chopped
    8.0 cloves Garlic, minded
    1.0 tsp Ginger, minced
    1.0 tsp Turmeric, ground
    1.0 tsp Pepper, black
    2.0 tsp Coriander powder
    1.0 tsp Salt
    1.0 tbsp Lemon Peel - 3 strips
    1.66 cup Canned Goods: Thai Kitchen Organic Coconut Milk (13.66 oz can)
    1.0 cup (8 fl oz) Water, tap
    0.5 serving Stevia Extract In The Raw Sugar Substitute [1 packet]

Directions

Wash and pat dry chicken, trim fat. Place onion, garlic, and ginger in a food processor and process till smooth, adding a bit of water if necessary. Place the chicken, onion mixture and remaining ingredients in a large pan and slowly being to a boil. Reduce heat, cover and some for 45 min or until the chicken is tender, stirring occasionally. Transfer the chicken to a plate, and remove and discard the lemon peel. Bring the sauce remaining in the pan to a boil, increase the heat to moderately high and cook, uncovered, until quite thick, stirring occasionally. Broil chicken for a few minutes, and serve with the sauce.
