Introduction

Ingredients

1 cup Nature's Earthly Choice Quinoa - 1/4 cup dry 1/2 cup cooked
2 cup Canned Tomatoes
0.33 cup Habanero peppers, raw (by GOAL_MINDED)
1 cup, chopped Green Peppers (bell peppers)
4 cup Spinach, fresh
2 cup Spaghetti/Marinara Sauce (tomato sauce)
0.75 cup, crumbled Feta Cheese
2 tsp Cumin seed
2 tbsp Chili powder
2 tsp Onion powder
4 tsp McCormick GrillMates Montreal Steak Seasoning
8 oz Cheddar Cheese, Kroger extra sharp
1.5 cup Beans, black
1.5 cup Beans, pinto
Directions
Cook quinoa according to pkg directions (2 cup water boiling, add quinoa, lower heat to low, cook covered 15-20 min). Meanwhile, chop spinach, peppers, tomatoes (use fresh or canned) and crumble in feta. In sep bowl mix tomato sauce and spices.
Preheat oven to 400. Spray 9x13 with cooking spray.
When quinoa is cooked, mix all veg, beans, sauce and quinoa together until well combined. Spread in pan and top with cheese.
Bake approx 30 min until heated through and cheese is melted well.
Serve in tortillas, on greens or with chips! Good with plain greek yogurt, avocado, tomatoes, lettuce and a squeeze of lime.
