Ingredients

    4.5 cup Cauliflower, raw
    4 oz Cream Cheese
    .5 cup Sour Cream
    3 serving Garlic (fresh, raw, 1 clove) (by MYWALK4LIFE)
    1 tsp Salt
    .5 tsp Pepper, black
    .33 cup Parmesan Cheese, grated
    1 oz Mozzarella Cheese, part skim milk

Tips

Many people complain their mashed cauliflower is too loose which is why you need to "dry" it. You can also roast the cauliflower before mashing but that tends to brown the cauliflower affecting the colour of the finished product. Many people add cheddar cheese to this dish but I find it overpowers the dish taking away from the mashed "potato" flavour


Directions

1) Break cauliflower into florets chopping stems small.

2) Steam cauliflower with garlic cloves over medium high heat for 20-25 minutes or until tender - depends on size of florets.

3) Drain cauliflower when tender and put back into pan over medium heat to dry out cauliflower.

4) Mash cauliflower over medium heat to continue to dry out cauliflower

5) Add salt and pepper (to taste) parmesan, cream cheese and sour cream until fully combined. Keep over low - medium heat reducing mash until you reach desired desired consistencey

6) At this point you can either serve it or place it in a covered casserole (sprayed with Pam) in 350 F oven to keep warm until rest of dinner is ready. You can put some additional grated cheddar and/or parmesan cheese over the top if you desire
