Introduction

Wonderful to eat as finger food or when you need a side dish you can throw in the oven and forget about. Wonderful to eat as finger food or when you need a side dish you can throw in the oven and forget about.

Ingredients

    1 medium potato- cut into chunks
    1/2 onion- cut into chunks
    some baby carrots
    1 tsp olive oil
    salt

Directions

Makes 1-2 servings (calories for one serving)
Preheat oven to 350 degrees
After cutting the potato (leaving skin on) and onions, mix together with carrots and olive oil. Place on a cookie sheet thats been sprayed with cooking spray. Sprinkle with salt to taste (or you can get creative with different spices).
Cook for about 20 minutes, then turn over, and cook additional 20 minutes. (times vary....it's really what you want)
