Ingredients

    1 whole boneless, skinless chicken breast, cut into chunks
    1 can pineapple chunks or tidbits
    1 1/2 tbsp. Kikkoman Teriyaki Sauce & Marinade
    1 tsp. ground coriander
    Red or cayenne pepper to taste
    1 cup brown rice (uncooked)


Directions

Drain pineapple juice into a medium bowl. Set the pineapple chunks aside.


Add 1 1/2 tbsp. teriyaki, and add cut chicken. Cover and allow to marinade for 15 minutes.


Heat a wok or shallow pan to medium heat. Spray lightly with olive oil or cooking spray. Add chicken, with the marinade, and season with red pepper and coriander. Cook until almost done. Add pineapple, cover and continue cooking on low or medium low while rice is cooking.


Serve chicken and pineapple over rice, with sauce from the pan. Serve with a side of asian or stir fry veggies.

    This meal was very good! I wish I would have added more cayenne (I put about 1/2 tsp in). I also boiled the chicken/sauce until the sauce thickened (mostly evaporated)...that made it extra good, I think. I served w/teriyaki rice (uncle ben's) and fresh corn on the cob... Yum Yum! - 5/26/08
