Introduction

Ingredients

    4 cups (1 quart) Chicken Broth
    4 cups shredded Cabbage
    1 cup chopped or diced tomatoes
    1 pound ground veal
    2 cups green beans cut into bite sized pieces
    3 cups artichoke pieces

    Spices: to your taste: ground pepper, basil, marjoram, thyme, rosemary, cardamom, vegetable powder, chili powder

Tips

Fairly flexible recipe. Carbs can be reduced more by eliminating the tomatoes. Celery and kale are both good adds to this. Onions are delicious, but add to the carbs. Pretty easy to keep this gluten free. I buy shredded cabbage, use canned diced tomatoes, canned green beans, and frozen artichokes to keep it simple.


Directions

Brown the veal with the spices. Add remaining ingredients except tomatoes. Simmer for 1 hour; Add tomatoes and simmer 30 more minutes.
