Ingredients

DRY INGREDIENTS
1.5 cup Spelt Flour
4 tsp Baking Powder
1 tsp Salt
.5 cup Granulated Sugar
1 tsp Cinnamon, ground
.5 tsp Cardamom, ground
WET INGREDIENTS
1 cup Blueberries, frosen or fresh
2 cup Bran Flakes
1 cup MIlk
2 large or extra large Eggs
1 tbsp Safflower Oil, oleic
Tips
Make this a pumpkin cake by just omitting the blueberries and adding 1 cup of pumpkin puree. If you like, add a pinch of clove and ginger too. Comes out moist and delicious!
Directions
Preheat oven to 350. Oil a loaf pan or muffin tim.
Sift dry ingredients into a large bowl, mix with a whisk and set aside.
Let Bran Flakes soak in Milk for a few minutes. Crack the eggs into a separate bowl and whisk until mixed. Add oil and whisk again to combine. Mix into bran flakes, add blueberries and stir a little to combine.
Add dry ingredients to wet and fold/mix gently until combined and uniform. Batter may seem a little heavy when it comes together. Try not to overmix. Scoop into muffin tins or dump into loaf pan, spread a little to even out and bake until a knife inserted in the middle comes out clean, about 40-50 minutes. Cool, slice and enjoy. Freeze the slices for the week! REALLY good with a little plain yogurt.
