Ingredients

    2 medium, very ripe bananas, mashed
    2 c.unsweetened almond milk
    3-4 egg whites, beaten
    1 tsp. vanilla extract
    1 T. (or one packet) stevia
    4 tsp. baking powder
    2 c. whole wheat flour (can also substitute half a cup of the flour with oat flour or another high fiber flour)

Directions

Mix bananas, milk, eggs, and vanilla in one bowl and set aside. In another bowl, mix dry ingredients. Slowly pour wet ingredients into dry ingredients. Spray a non-stick skillet with cooking spray. Recipe makes about 15 average sized pancakes. Serve with sugar-free syrup or fresh fruit.

    I am a breast cancer survivor ~ so I try not to use sweeteners, I just use sugar. How much sugar would I use in place of the Stevia? - 1/9/11

    Also add 1 tsp cinnamon, 1 tsp nutmeg, and 1/2 tsp ginger to bring on additional flavor! Fantastic! - 6/10/10

    Very Good
    Next time I will be adding either blueberries or raspberries, or maybe strawberries on top as they were a little bland for my taste (without syrup) but my banana hating son loved them with syrup! - 12/6/12
