Ingredients

    6 large Egg, fresh, whole, raw
    0.25 cup Fat free half and half
    1 oz Gouda Cheese
    0.75 cup Spinach, cooked
    0.75 cup Bell peppers (Green, Red, Yellow, Orange)
    2 serving Green Onion (fresh-1 stalk)
    0.5 tsp Salt
    1 oz Parmesan Cheese, grated
    3 oz Ham, spiral cut, Hormel

Tips

May freeze after baking.


Directions

beat eggs
add milk
stir in cheese

Saute peppers and onions in pan with cooking spray.
Add spinach, saute briefly. Let veggies cool.
Mix veggies, egg and chopped ham.

Spray muffin pan (12 muffins) with cooking spray.
Fill each muffin cup halfway with mix. Sprinkle with parm.

Bake 25 min at 350.

Can freeze.

Serving Size: makes 12 muffins
