Ingredients

    6 serving Red Potato
    16 oz Ham, spiral cut, Hormel
    1 cup (not packed) Cottage Cheese, 2% Milkfat
    2 tsp Mrs. Dash (R) Garlic & Herb Seasoning Blend
    1 tbsp onion, dried minced (by JLFREEMAN65)
    2 tbsp Extra Light Olive Oil
    3 oz Spinach - Dole Baby Spinach
    0.25 cup Kraft Shredded 2% Mexican Four Cheese blend

Directions

In a large pot, add 6 cups of tap water, and olive oil.
Cut up red potatoes into cubes and add to pot to boil for one hour.
Drain potatoes, and let cool about 5 minutes.
Cut up ham, and spinach into bite size pieces.
Spray a 13 x 9 x 2 inch pan
In a large bowl, mix together the potatoes, ham, and spinach.
Then add the cottage cheese, and seasonings to the mixture.
Make sure to mix the potatoes, ham and spinach with the cheese so all flavors are blended.
Pour mixture into the pan, then sprinkle cheese evenly across the dish.
Bake at 350 degrees for 20 minutes, or until cheese has melted and a little brown.
