Introduction

This is for Polish kifli dough only. Does not include filling as those are at discretion of each baker. My favorites are homemade tart cherry, homemade blueberry, homemade pineapple, and lemon or lime (using Dickerson lime curd) When I make my own filling I use cornstarch and fresh fruit to thicken and cut sweetness. Ingredients

    2 cup Flour - Gold medal all purpose flour
    1 stick Butter, salted
    8 tbsp Shortening, Crisco
    8 oz Cream Cheese

Directions

In large mixing bowl cut butter, crisco, and cream cheese into flour with fingers. Incorporate using paddle attachment . Do not over beat. Turn out dough into bowl then form into 2 or three balls. Dough will be quite sticky. cover and chill overnight .the dough will develop and come together. On floured surface (I use silicone mat) roll out quite thin. Cut 2 inch squares. Fill just a bit off center on the diagonal. Not too much though. Fold point over the filling. At this point, with my finger, I dab a bit of water next to filling on inside and lightly press tip of dough, the other side fold completely over previous fold and lightly press just under bottom. This prevents cookie from splitting open during baking. Place on parchment paper covered cookie sheet. I double my cookie sheets to create an air bake pan and bake for a longer time. Approximately 20 minutes Bake 400 degrees
