Ingredients

    1 cup Lentils, rinsed & drained
    2 cups Vegetable Broth
    1 can Thai Kitchen Coconut Milk, unsweetened
    1 small yellow onions, diced (appx 1 cup)
    3 cloves Garlic, minced
    3 Carrots, sliced (appx 1 1/2 cups)
    1 tbsp Curry powder

Tips

This would be super yummy served over brown rice, or riced cauliflower (for lower carbs)


Directions

Add all ingredients to 1-gallon sized freezer bag (be sure to label and add a "use by" date of 3 months as well as cooking instructions). Remove as much air as possible. When ready to cook, thaw overnight or in water the morning of. Add all freezer bag contents to crockpot. Cook on low for 8 hours.
