Introduction

Ingredients

    3.90 cups White Rice, long grain, cooked (1.25 cups, uncooked)
    1 tbsp Extra Virgin Olive Oil
    16 oz Pacific cod (fish)
    1 tsp Lowry's Seasoned Salt
    2 large Eggs
    6 tbsp Egg Whites
    1 tsp Coarse Kosher Salt
    16 oz Mixed Vegetables, frozen
    4 tbsp Sunflower Oil
    3 tbsp Coconut Aminos

Directions

Cook rice per instructions In a separate pan heat olive oil on medium-high heat Cut cod into 1/2" pieces Once oil is heated, add cod to pan and mix to distribute oil Add seasoned salt to fish in a separate bowl, whisk eggs, eggs whites, and salt Once fish is cooked through (3-4 mins) remove from pan and place in large bowl Add eggs to pan and scramble Once cooked through, remove scrambled eggs and add to large bowl with fish Add frozen vegetables to pan and cook, stirring occasionally until browned Remove vegetables from pan and place in large bowl with fish and eggs Add sunflower oil to pan and increase heat to high Add cooked rice to pan carefully to prevent oil splatters Stir fry rice until rice begins to slightly brown Remove pan with rice from heat and add coconut aminos Mix rice until aminos are distributed then add rice to large bowl with other ingredients Stir all ingredients together Serving Size: makes 15 1/2 cup servings
