Ingredients

2 cans black beans, drained and rinsed
1 medium Onion, chopped
1 medium Pepper, chopped
1 Jalapeno Pepper, seeded, chopped
4 clove Garlic, minced
1 cup Swanson Chicken Broth 99% Fat Free
2 tbsp Lime Juice, juice of 1 lime
1 tbsp Oregano, ground
1/2 tsp kosher salt
1 Bay Leaf
1 packet Goya Sazon con culantro y achiote
2 tbsp Canola Oil
Tips
Most sofritos call for vinegar, but I prefer the flavor of straight lime juice.
Directions
Make the sofrito:
In a saucepan over medium heat, add oil to pan.
Add chopped onion, bell pepper, jalapeno pepper, and garlic. Sweat the vegetables about 10 minutes, until the onion starts to melt a bit. Add Sazon, oregano, and salt, and stir to coat the vegetables.
Add lime juice to deglaze the pan.
Stir in chicken broth, beans, and bay leaf. There should be enough liquid to just cover the beans. Add more broth if needed.
Bring to a boil, then drop the heat to low, cover, and simmer 1 hour.
Serving Size: Makes 8 servings, 1/2 cup each
