Introduction

Number of Servings: 20

Ingredients

    2 stick Butter, salted
    4 cup Self-raising Flour
    0.5 tsp Salt
    1 tsp Baking Soda
    0.5 cup, packed Brown Sugar
    0.5 cup Honey
    4 large Egg white, fresh
    6 medium (7" to 7-7/8" long) Banana - the older the better, I use ones which have turned pretty much black
    0.5 cup Sun-ripened mixed Fruit (1/4c serving)

Directions

1. Cream together butter, sugar and honey
2. Add eggs
3. Mash up or liquidise bananas
4. Add bananas to egg mixture
5. Add flour, baking soda and salt
6. Mix until smooth
7. Stir through mixed fruit
8. Place one spoon (I use an icecream scoop) of mix in to each muffin case in a muffin tin
9. Cook at 350F for 20 minutes
10. Voila!
