Ingredients

    1 serving CaUliflower, Raw 1 medium head (nutritiondata.com) (by MISSMERCURY0) 2 tbsp Sesame Oil 2 large Egg, fresh, whole, raw 0.5 cup Red Onion Raw (1/4 cup, 40g or 1.4oz) 1 cup Peas, frozen 9 tsp Coconut Secret Coconut Aminos Garlic Sauce, 1 tsp/5ml (by MAO-MIAOWS) .25 tsp Pepper, black 0.5 tsp Diamond Crystal - Kosher Salt (by SHIRTTALES) 4 medium (4-1/8" long) Scallions, raw

Directions

Wash cauliflower thoroughly, breaking up into florets. Pulse them in a food processor until a rice-like consistency. Do this in batches, if necessary. In a large skillet or wok, add 1 Tbsp. of sesame oil and heat over medium heat. Add the beaten eggs; cook and stir until done, then set aside. In the same pan, add 1 more Tbsp. of sesame oil along with the onion and carrot. Cook, stirring occasionally, until veggies are almost fully cooked, then add the garlic and cook a little longer. Add the cauliflower rice, peas, coconut aminos, black pepper and the eggs. Mix well to combine. Adjust seasonings to taste. Sprinkle with chopped scallions as a garnish, if desired. Serving Size: 4
