Introduction
Easy to toss this together early and let chill until ready to eat! Serves one but easily can be made in larger batches and divided! Easy to toss this together early and let chill until ready to eat! Serves one but easily can be made in larger batches and divided!Number of Servings: 1
Ingredients

1 C canned black beans rinsed and well drained
1/2 c can kernal corn drained
2 Tbs finely chopped onion
1 TBS crumbled feta cheese
2 TBS low fat vinegrette dressing
* 3 Triscuit whole wheat crackers optional
Directions
Rinse and drain black beans
Drain corn and add to beans in a small bowl
Finely dice 2 TBS onion - add to bean/corn mixture
Toss with 2 Tbs low-fat or fat free vinegrette
Cover with plastic wrap and allow to chill completely before serving. Just before serving add crumbled feta cheese .....serve with Triscuit or other whole wheat crackers.
* * Serves 1 -Entree size portion or two side dish portions ;)
* * Rinsing the black beans lowers salt content though not reflected in the recipe calculations here.

I definitely will make this recipe BUT are you sure this is 1 serving? I personally do not think I could eat all of this in 1 sitting. - 7/2/08

one serving if a meal 2 or more for a side dish, of course its all depending on how hungry you are! Some days I don't finish a whole serving in one sitting either! LOL
