Ingredients

    1 15 ounce can of black beans
    Lime Juice, .25 cup
    Salsa, 2 tbsp
    Wild Rice, .5 cup
    Mangos, 2 fruit without refuse
    Salt, .75 tsp
    Pepper, black, .5 tsp
    Olive Oil, 3 tbsp
    1 cup green onion sliced thinly
    3 Tbsp chopped cilantro

Directions

mix all ingredients in a big bowl

    awesome recipe! tasted great and even my picky 4 year old enjoyed it! instead of using wild rice which takes forever to cook, I just used brown rice. - 10/24/08

    I forgot to put the olive oil in but this is a fabulous dish. i try to have at least one meatless meal every week. I'm going to serve this over a bed of lettuce often! Thanks for posting.
    ps. the colder it is, and letting it sit at least several hours, brings out the flavors.

    This was pure heaven! We served it at a family meal that included vegans, veggies and omni's. Was even better the second and third day as leftovers. - 12/22/08

    Incredible!
    So delicious! I left out the cilantro and added green onions and it was still great! I thought it was best after is sat a few hours in the fridge :) - 1/25/17
