This is an easy salad to throw together as a side dish or by itself. This is an easy salad to throw together as a side dish or by itself.

Ingredients

    1 15 ounce can of black beans
    Lime Juice, .25 cup
    Salsa, 2 tbsp
    Wild Rice, .5 cup
    Mangos, 2 fruit without refuse
    Salt, .75 tsp
    Pepper, black, .5 tsp
    Olive Oil, 3 tbsp
    1 cup green onion sliced thinly
    3 Tbsp chopped cilantro

Directions

mix all ingredients in a big bowl

    awesome recipe! tasted great and even my picky 4 year old enjoyed it! instead of using wild rice which takes forever to cook, I just used brown rice. - 10/24/08

    I forgot to put the olive oil in but this is a fabulous dish. i try to have at least one meatless meal every week. I'm going to serve this over a bed of lettuce often! Thanks for posting.
    ps. the colder it is, and letting it sit at least several hours, brings out the flavors. - 7/23/12

    This was pure heaven! We served it at a family meal that included vegans, veggies and omni's. Was even better the second and third day as leftovers. - 12/22/08

  • This was very delicious, I also forgot to put the olive oil in and don't miss it at all. The only change I made is to sub parsley for the cilantro since I don't like the taste of cilantro. Will make again for sure! - 8/31/14
