Ingredients

    2 cans Goya Black Beans - drained & rinsed
    2 cups College InnĀ® Light & Fat Free Chicken Broth 50% Less Sodium (Or veggie broth to make vegetarian)
    Onions, raw, .66 cup, chopped
    1 cup green pepper, diced
    Pepper, black, .25 tsp
    Salt, .25 tsp
    *Cumin , .5 tbsp
    Bay Leaf, 1 tsp, crumbled
    Chili powder, .5 tsp
    Garlic, 2 clove
    1 2-serving bag instant Success brown rice

Directions

place all ingrediants in crockpot except for rice, mix well.

cook on low 8-10 hours.

In last 15-30 minutes, remove bay leaves, turn heat to high and add instant brown rice. The longer the rice sits, the more the liquid is soaked up.

Serving suggestion - use as filling for burritos (let excess liquid drain out first if the rice hasn't absorbed it all). I made with low carb wraps, salsa and low fat mexican blend cheese.

    I added a 1/2 cup of salsa and 1/2 tsp of cilantro. This gave it a kick and made a great dinner. Thanks! - 10/17/09

    O.K.
    this was okay. instead of instant rice, i put in leftover brown rice and let it warm threw. served with leftover cooked chicken breast. - 12/10/08
