This marinated flat iron steak recipe is soooo yummy. As tender as a filet, but without the price tag.

(Note that the calorie count is somewhat inflated, since most of the marinade gets thrown away, rather than consumed.)

Ingredients

1 pound flat iron steak (top blade steak)
    2 Tb olive oil
    2 cloves garlic, crushed
1 t chopped Italian parsley (or 2 t dried parsley)
    1 t dried chopped rosemary
    1/4 cup red wine
    1/2 t dried mustard

Directions

Mix all ingredients together. Marinate steak for 1 - 3 hours. Grill over hot coals, about 4 - 6 minutes per side. (In a George Foreman grill, 6 minutes gives a nice medium rare.) Serve in thin slices.

we LOVE flat iron steak! like the combination of this marinade--it's a flavorful steak & not tough, so I usually just marinade for 30 min-1 hr. - 8/10/09

Looked up the recipe today because I found flat iron steak on sale last night. Had never tried it before but it had been recommended to me by a friend. I used white cooking wine and only marinated about 40 minutes. The directions for cooking on the Forman grill for 6 minutes were perfect! - 4/7/10

This was really good, thanks! I didn't have dry mustard so I used 1/2 tbsp of regular mustard, and I used sherry cooking wine. I think next time I will not add as much rosemary, as it was a hint too strong, but overall the whole family loved it and some didn't use A1 like they normally do! - 1/5/10

    Incredible!
Broiled mine and turned it half way. 5-6 minutes each side was plenty for medium well.I used 1 tsp. of Tuscan flavored olive oil with other ingredients and marinated for several hours. I am a fan of Penzys seasonings and added some "Chicago rub to it as it marinated. Perfect! My go to recipe now. - 3/3/16
