Ingredients
-
6 large Egg, fresh, whole, raw
.5 cup Butter, salted
3 tbsp Coconut Oil
1.33 cup Bob's Red Mill Almond Meal/Flour (1/4 cup is 28g)
11 tbsp Red Mill Organic Coconut Flour (by CSIENK)
.5 tsp Xanthun Gum (by TRAINLADY1107)
1 tsp Baking Powder
0.5 tsp Cream Of Tartar
.5 tsp Salt
Tips
You can also skip separating the eggs and beat them together then add the rest, however I feel you get a little more lift in the bread doing them separately.
Directions
Separate room temperature eggs into separate bowls. Beat egg whites with cream of tartar until stiff peaks, place 1/3ish of the egg whites in a separate bowl.
In a separate bowl, whisk all dry ingredients to combine.
Add egg yolks and dry ingredients to the egg whites and mix until combined.
Fold in the set aside egg whites until incorporated.
Pour into pan – actually it’s more like scoop, use the spatula to smooth and shape the sides a little.
Bake about 40 min or until brownish – I brushed butter on top at the end and baked about 5 min longer. Cool on rack.
Store in a ziplock bag.
