Introduction

Since most of my family are diabetics I modified this common recipe to take out as much sugar as possible and keep the sinfully good taste! After this has set in the refrigerator over night it tastes as indulgent as a full-calorie diet killer chocolate eclair! Ingredients

    Cake Layers:

    2 small boxes of Sugar Free Cheesecake Jell-O Instant Pudding
    3 1/2 cups skim milk (Land O'Lakes Lactose Free Milk)
    8 oz. Sugar Free Cool Whip Topping (thawed)
    1 box low fat Graham Crackers

    Frosting:

    2 pkg. of Choco-Bake chocolate (softened)
    2 tsp. light corn syrup
    2 tsp. Vanilla flavoring
    3 Tbsp. skim milk (Land O'Lakes Lactose Free Milk)
    1 1/2 cups confectioner's sugar

Directions

Cake Layers:

Blend pudding mix and milk together then fold in Cool Whip. Layer bottom of 9 x 13 pan with graham crackers. Pour half the pudding mixture over the graham crackers and spread evenly. Layer again with graham crackers, pour remaining pudding mixture over them and spread evenly again. Layer final time with graham crackers and refrigerate one (1) hour before frosting.

Frosting:

Mix Frosting ingredients until smooth. Top graham cracker dessert. Allow to stand in refrigerator for several hours (preferably over night) before serving.

Makes 12-15 servings, depending on what size you cut the pieces in the pan.

Total prep time is about 80 minutes if you count the refrigeration time.
