Ingredients

    2 large Egg, fresh, whole, raw
    60 grams Cream Cheese
    .125 tsp Vanilla Extract
    Lemon zest (optional)
    1 dash Salt
    .25 tsp Cinnamon, ground
    2 tbsp Kerrygold (Pure Irish Butter)

Directions

Bring creme cheese to room temperature (can speed this up with a hot-water bath if in a sealable container or zip-lock bag)

Add all ingredients except butter to a blender and blend until smooth. Let sit for a few minutes to allow bubbles to work their way out.

While batter is sitting, heat pan to medium/medium-low and add half the butter. When pan is hot, add a thin layer of batter to the pan. Cook until bubbles form on back, then flip and cook for an additional minute or so (cook time will vary based on cooking heat)

Flip carefully, crepes are very thin and fragile.

Stack with additional butter and add whatever toppings you desire. Heavy whipped cream and berries are fantastic.

Serving Size: Makes 1 serving of around 4-6 crepes
