I can't believe it's vegan!

Easy to make, super nutritious, and very filling.

High in iron and protein!

Adding these fresh ingredients to the pre-made pesto mix elevate the dish and make it unrecognizable.

Ingredients

    2 serving Bread Whole Wheat 100% Stroehmann Dutch County (1Slice) (by BUCHCAB)
    1 cup Spinach, fresh
    0.25 cup Daiya Mozzarella Style Shreds (w/ vitamin %)
    .5 serving Trader Joe's Vegan Kale, Cashew, and Basil Pesto
    .25 oz Cashew Nuts, dry roasted
    1 medium (4-1/8" long) Scallions, raw

Tips

Add other rich leafy greens to meet your mineral needs.


Directions

Toast bread.

While toasting, dice fresh spinach and put in freezer so it will be cold enough. Leave it in freezer. If you are quick, you can use the fridge instead.

In pan, roast fresh chopped cashews with scallions.

Then add 2 tablespoons of the Trader Joe's pre-made pesto mix.

Push cashews and scallions to side and place bread in pan.

Top the bread with the mixture.

Melt 1/4 of the daiya cheese on top of it all.

Now it looks like an open-faced grilled cheese.

Cover pan over low heat to melt cheese (may take some time but keep your eye on it so the bread doesn't burn).

After the cheese has melted, turn the heat off and lift the cover off the pan. Wait a minute and take out your chilled spinach. Put it on top.
