Introduction

a vegan alternative to the tradition gumbo for vegans and the alternative to Emeril's Green gumbo which uses collards, mustard, turnip and kale. Ingredients

    10 cup 2# Bag Fresh Collard Greens (raw)
    1.00 cup Hinode Black Rice (by FITLLOYD)
    1 cup Onion, Sweetie Sweet (1 cup chopped) (by JEANSOPHIE)
    0.25 cup Bob's Red Mill Whole Wheat Pastry Flour (by REPPRISA)
    0.25 tsp Spike All Purpose All Natural Seasoning (by SLASALLE)
    1 tbsp Pepper, black
    2 tbsp Garlic powder
    2 tbsp Peanut Oil
    8 cup Imagine Organic No-Chicken Broth Low Sodium (by LAZER30)

Directions

heat the peanut or the oil in the bottom of the pot add the flour to make the "roux" or smooth gravy. add half of the onion some of the seasoning and stir while browning the flour. add the greens and the rest of the ingredients except the black rice. when the greens have cooked to a beautiful dark green add the rice, add water and broth as needed, turn heat low and simmer.
