Introduction

Ingredients

    2 eggs
    1/4 cup feta cheese
    1 1/2 cup fresh spinach (torn)
    salt and pepper to taste
    or
    for salt-free recipe use
    Mrs. Dash original blend

Directions

In 4 cup microwave-safe bowl, beat eggs, mix cheese, torn spinach and seasonings to taste. Micro-cook 55 seconds on high. Stir and micro-cook additional 20-30 seconds till cooked but not dry.
