Ingredients

1 1/2 LBS of Cubed Beef (for Stew)
1 tbsp of canola oil
2 to 3 medium potatoes (cubed)
1 envelope of Sazon Accent
0.75 tsp. adobo seasoning
2 to 3 medium carrots (cut in 1" pieces)
1 can of sweet peas
3 to 4 cooking olives
1 tsp of capers (drained)
2 tbsp of white or red wine
1 tbsp of sofito
1 can of tomato sauce (approx 8 oz)
1 to 2 bay leaves
Salt to taste
Directions
Season the beef 30-60 minutes before cooking (preferably the night before).
Clean, peel and cut the potatoes (and carrots) and place them in a bowl of salted water.
In a Medium to large pot add the oil and sear the beef (Medium High) on all sides.
Add the sofrito, tomato sauce, sazón, capers and wine.
Add 2-3 cups of water and cover.
Put temperature on Med-Hi. After it begins to bubble, cook for 35-40 minutes (stirring occacionally), strain the potatoes (and carrotts) and add to pot.
Reduce temerature to Medium and continue cooking for anotherhe 50-65 minutes or until meat and vegetables are fork tender.
