If you are finding you have a deficiency in potassium, the sweet potato is a lovely and tasty meal. If you have room for a little more sodium, hummus can be substituted for the neufchatel (lowfat cream) cheese. Ingredients

    baked or bbq-ed sweet potato in the skin
    baby zucchini sliced and bbq-ed
    tomatoes, chopped or wedged
    tumaro's low fat multigrain tortillas (best tortilla for protein, sodium and fat levels)
    Neufchatel cheese (low fat cream cheese)

Directions

Turn your grill on low, or find a medium hot place on the charcoal and let sliced zucchini have the gentlest flame. Place the sweet potato (rinsed) on the warmer area, still in a medium heat location. Turn the potato. When you see the sugar run from the potato, it should be done. Spread cream cheese on the tortilla and embed the tomatoes in the cheese. Hummus is a nice variant for cream cheese. With a fork mash the sweet potato down on top of the tomatoes, place the zucchini slices on the top and roll your tortilla up. I like the ability grill other vegetables in season and mix it up. Enjoy!
