Ingredients

    1 bag fresh spinach (10 oz)
    2 Tbsp pine nuts, chopped
    3 cloves garlic, chopped
    2 Tbsp basil, dried
    1/2 cup onion, chopped
    1,1/2 cups veggie broth
    2 Tbsp olive oil

Directions

Bring broth to a rolling boil, add garlic, onion, pine nuts and basil. Boil for 5 minutes until onion is soft. Remove from heat then stir in olive oil and fresh spinach.
Toss with your favourite pasta and serve with shredded parm (not included in nutritional count).

    Very Good
    I made this tonight and subbed hemp seeds for pine nuts becuase that's what I had on hand. It was very good, and a nice change of pace since most spinach recipes have cheese or milk in them and my husband doesn't 'do' dairy. Went great overtop cous cous. - 8/7/08
