Introduction

A tasty snack bar to eat for breakfast or in between meals. A tasty snack bar to eat for breakfast or in between meals.
Number of Servings: 16

Ingredients

    1 sweet potato, baked, skinned
    1 1/2 c. quick oats
    1/2 c. Bisquick or other baking mix
    1/3 c. light brown sugar
    2 Tbsp. honey
    2 Tbsp. strawberry preserves, sugar-free w/Splenda
    1 egg
    1 Tbsp. cinnamon
    1/2 c. tropical trail mix
    1/2 c. diced prunes or raisins

Directions

Preheat oven to 400 degrees. Mix all ingredients together. Line a 8" X 12" pan with tin foil and spray lightly with cooking spray. Spread mixture into pan. Bake 15 minutes. After the mix cools, pick it up out of pan holding the sides of foil. Cut into 16 bars. Freeze remaining bars for quick snack later.
