Introduction
I modified the label recipe by using brown rice and added veggies (I choose sweet peas and carrots but you can sub your own choice) - casserole is wonderful! I did not have Onion Powder - but I added a little paprika and ground pepper.Recipe originates from Campbells Condensed 98% Fat Free Cream of Chicken Soup label. Ingredients

1 can (10.75 oz) Campbell's 98% fat free Cream of Chicken Soup
1 1/3cups water
3/4 cup uncooked brown rice
2tsp. black ground pepper
1.5tsp paprika (approx)
4 skinless, boneless clean chicken breast halves
1/2 cup 2% cheddar cheese
1 can 15oz can sweet peas and carrots (drained)
label calls for 1/2 tsp onion powder (I didn't have any - added pepper and paprika instead)
Directions
Pre-heat oven to 375.
I used a large casserole dish. Added the water, soup, spices and mixed well in the dish. Added the rice and veggies and mixed as well. What took me a little longer was prep'ing the chicken by makng sure there was no fat on it and cutting it into smaller pieces. The label does not call for that - but I like it this way. Up to you.
Cover dish and place in oven. Label states 45 minutes. I checked at 50minutes and I still had water and the rice was not done. Since ovens vary - add additional time as necessary. (It took me about another 20-30 min to get the rice cooked and the liquids reduced). Once rice is cooked - sprinkle cheese and leave it in the oven for just a few more minutes to melt. Serve and enjoy!
